Lake's Folly Cabernets is a blend of Cabernet Sauvignon, Merlot, Petit Verdot, and Shiraz crafted from low-yield, estate-grown, hand-picked grapes. The fruit undergoes open fermentation, resulting in softer, subtler tannins, followed by six months in large old casks for settling. It is then aged in small French oak barriques (new and one- to two-year-old) for about a year before bottling. This wine has excellent long-term cellaring potential of up to 20 years, depending on the vintage.
