The Sentinel Shiraz is born from our vineyards at Roennfeldt Road estate in Marananga, Barossa Valley. Hand-picked and fermented in open top fermenters, it undergoes rigorous pump-overs for optimal color, flavor, and tannin extraction. After fermentation, the wine is basket pressed and aged in a mix of new (26%) and seasoned (74%) French oak barriques for 16 months. Its rich ruby red hue swirls with vibrant crimson, while the nose reveals aromas of freshly roasted coffee, Christmas cake, black currant, dates, and baking spices. On the palate, indulge in flavors of blackberry, black plums, cocoa powder, and graphite, alongside fine grain cedar oak tannins and refreshing acidity. This wine is a true gem, approachable in its youth yet capable of aging gracefully for 15-20 years in the cellar.
