Critic tasting note: (2018 vintage) "This wine's intriguing nose combines rich candlewax with bright lemon oil. The palate is rounded and smooth, with buffered freshness on the midpalate. It is here that the sense of chalky depth comes in, conveying a stony, austere hinterland for which 2018's generous fruit is mere window dressing. Vineyard Notes
Located on the Côte des Vaillons, this appellation has 8 distinct « lieux dits ». With a soil base more limestone than clay, sitting on hard, compact Portlandian limestone, it represents all the different types of Chablis terroir under one appellation.
Winemaking
40-50% fermented in french oak barrels and the rest in stainless steel vats.
Ageing
13 or 14 months of maduration, of which 5 to 6 months on fine lees in french oak barrels, for 50 to 60% of the harvest. The end of maduration occurs in stainless steel vats.
