It is here that the sense of chalky depth comes in, conveying a stony, austere hinterland for which 2018's generous fruit is mere window dressing. Vineyard Notes
Located on the Côte des Vaillons, this appellation has 8 distinct « lieux dits ». With a soil base more limestone than clay, sitting on hard, compact Portlandian limestone, it represents all the different types of Chablis terroir under one appellation.
Winemaking
40-50% fermented in french oak barrels and the rest in stainless steel vats.
Ageing
13 or 14 months of maduration, of which 5 to 6 months on fine lees in french oak barrels, for 50 to 60% of the harvest. The end of maduration occurs in stainless steel vats.
