100% whole berry ferments in both small open, and large, open-top concrete fermenters. A mixture of plunging and pump-overs during an average of two weeks on skins. Natural yeasts were used and once ferment was complete, the wines were pressed to tank to settle overnight and then transferred to barrels to complete MLF.
Tasting Notes
Bright medium garnet
Blackberry, black cherries, vanilla, tar and baking spice.
Raspberries, red currant, red liquorice and blackberry mix on the palate with baking spice and mocha notes. Pure, acid drive and silky tannins.
