The estate spans 10 hectares of vines divided into around twenty plots, each with its own distinct character, with some vines planted up to 75 years ago, and a constant attention to detail, as required by organic viticulture. Grand Cru Les Clos, Premier Crus Vaugiraut, Mont-de-Milieu, Fourchaume, Montée-de-Tonnerre, Montmains, and Vaillons: these are well-known lieux-dits that Chablis enthusiasts will recognize, and are proudly featured on our estate.
Today, it is Lilian Duplessis who oversees the vineyard. Concerned about soil health and climate issues, he now works solely with organic production, aiming to respond accurately and respectfully to the various diseases that threaten the vines. These practices not only preserve the quality of the wines but also meet the growing demand from connoisseurs of fine Chablis. Depending on the vintageâ€?018, for example—the use of sulfur may be completely absent in the winemaking process.
