Sourcing grapes from exceptional vineyards in the upper Derwent, Coal River, and Huon Valleys, Domaine Simha creates single-vineyard wines shaped naturally to capture the essence of Tasmanian terroir and seasonal character. Grapes are hand-harvested in sync with the lunar calendar on fruit and flower days. Traditional methods like whole-bunch wild fermentation, foot stomping, and gentle pigeage result in wines with remarkable elegance, depth, and aromatic complexity. Using clay amphorae, ceramic eggs, and custom demi-muid oak barrels enhances the fruit's expression. Bottled unfined and unfiltered, these wines exhibit perfect natural balance, strong foundations, and exceptional aging potential.
